Coleslaw with Tahini Dressing
4 cups shredded green cabbage
1 ½ cups red cabbage
1 cup grated carrot
1 cup minced red pepper
½ red onion minced
Dressing
4 Tablespoons sesame tahini
4 Tablespoons brown rice vinegar
2 Tablespoons rice syrup or honey
6 Tablespoons warm water
1 Tablespoon lemon juice
Sea salt and black pepper to taste
2 teaspoons Dijon mustard
Place first 5 ingredients in a large bowl. Whisk together the ingredients for the dressing allowing the warm water to break down and thin out the thickness of the tahini. Pour over the prepared ingredients in your large bowl when desired consistency of dressing is attained. Mix and refrigerate if desired. The fats of the tahini may solidify in cold temperature so remove from refrigerator for about 15 minutes prior to eating.
Makes 8-10 servings (Great for Potluck Parties)
